Chances are if you’ve been to Publico, you’ve seen or even met Theo Bougas in action! The managing partner’s friendly face can be seen behind the host stand, manning the bar and circulating through the restaurant making sure all guests are having the optimal experience. In celebration of Publico’s 5th Birthday, we asked 5 questions about working at one of Southie’s most popular spots!

Favorite thing about working at Publico?

My favorite thing about working at Publico and being a part of it since day 1 is the social aspect of constantly meeting new and amazing people every day.  I come from a big Greek family and we have created a family of our own here between the staff, neighbors, regulars, visitors it really feels like coming “home”…and I’m not just saying that because I happen live right upstairs. I’m grateful for that fact that being in the business of hospitality has lead to some fantastic, livelong friendships along the way.

Biggest lesson learned in 5 years?

Nothing happens overnight – Patience truly is a virtue.  After these past two plus years, I’ve learned that you never know how resourceful and tenacious you can be until you are facing with incredible challenges.  Make sure you take the time to know your demographic and understand their needs, wants and nuances. Be relatable, authentic and yourself…this is hospitality after all.

Most popular item on the menu?

This is a tough question because Chef Joel is truly a genius in the kitchen who has kept people coming back for the past few years.  However, we wanted to something extra special for this milestone which lead us down the path of collaborating with the incredibly talented Brittany Di Capua of @BostonFoodJournal and her viral photo series known as “Meals on Heels.”  The series features her favorite food and drink around Boston perfectly balanced on the soles of her heels with the latest images being a five of Publico’s most popular and beloved menu items – Bolognese, Hot Dog, Lamb Chop, Chicken Benedict and our iconic Slush Puppie. 

Craziest, funniest, or strangest situation that happened in 5 years?

Publico Pete has been kidnapped twice and we got him back both times!(I even have the photos to prove it!)

Most instagrammed spot in the restaurant?

Most instagrammed spot is in our interior courtyard atrium which has become something of an urban oasis. What KEEPS in Instagrammable has been the creativity that exists within the team who have come up with some amazing and photogenic ideas and concepts on a seasonal basis, from the Lodge in the Winter to the Beach Club in the summer…it gives you IG-worthy content for all seasons.

On Sunday,  February 27th, Publico will host its official five year birthday bash featuring complimentary bites, themed cocktails and some special treats for guests and neighbors. The fun takes place from 5pm-9pm. Stop by!
