Cleavers and nakiris, petties and parings, santokus and chefs: it can feel like understanding knives requires an entirely new vocabulary. And that’s before you even get into slicing, dicing and mincing or advanced mirepoix, julienne and roll cuts. Join us in-person at Milk Street to cut through the confusion and start your year of cooking with confidence when it comes to your most important kitchen tool. Milk Street TV cast member and dedicated knife nerd Josh Mamaclay will cover the construction and functions of our favorite knives, then let you try them out as you do the knife work for a big batch of Filipino Stir-Fried Rice Noodles with Vegetables. You’ll get an introduction to our must-have knife care tools, from hones and sharpeners to boards and storage—because good knife skills aren’t just about lightning-fast chopping, they’re also about smart kitchen systems. You’ll practice unconventional knife skills—and learn when the right tool for the job isn’t a knife at all—as you make a traybake of slashed chicken and a big bowl of smashed cucumber salad. You will also walk away from this class knowing how to choose, use, store and maintain the right knives for your style of cooking.
NOTE: You’re welcome to come to class with your own favorite knife if you want to improve the way you use it. If your knife could use some sharpening, choose the “Sharpen My Knife” option when you’re completing your registration and we’ll sharpen it for you—or help you sharpen it yourself—during or after class. The cost to sharpen each knife is $20.
About Josh: Josh Mamaclay has been fascinated by flavor since he first dove into the back of the pantry at 10 years old. His passion for food brought him to Johnson & Wales University in Providence, Rhode Island, where he earned his bachelor’s degree in culinary arts and food service management. Since then, Josh has worked in pizza joints, fine dining restaurants and a chocolate factory. He has developed recipes for meal kit delivery brands like Purple Carrot and TB12 and served as the Marketing and Engagement Manager at Curio Spice Co. When he’s not busy cooking, you can find him painstakingly styling and photographing food, singing with his husband while strumming his ukulele, or leading intrepid adventurers through a fantasy-filled game of Dungeons & Dragons.
